One of the best hotels that we ever got a chance to visit is Fairmont’s 5-stars Royal Palm Marrakech that spreads over 231-hectare estate. It has the most magnificent views over the gardens, stunning hotel’s golf course and across snow-capped Atlas mountains. The hotel is designed by architect Jean-François Adam, the founder of JFA Architects, and presents a special blend of rustic Berber charm with a contemporary edge. At this marvelous hotel you may try different cuisines, from traditional Moroccan, Japanese to International. For those wanting the ultimate dinning experience, we recommend Le Caravane that offers international cuisine with a refined menu, created by Chef Yann Meinsel.

the pool and golf course with the Atlas Mountains in the backdrop
With twenty years of experience, chef Yann Meinsel has excelled in many renowned addresses in the French capital including Alain Ducasse‘s 59 Poincaré, Hotel Plaza Athénée and Hotel de Crillon. He was assistant chef to Jean-François Piège for 14 years, and acted as a culinary consultant for the first season of the Top Chef competition on the French TV channel M6. He joined the Royal Palm in March 2015 and started to create wonders.
Le Caravane is decorated with rich fabrics in warm orange and brown tones, it has enormously high ceiling and large windows that provide the spectacular view. The restaurant has various spaces carefully arranged to guarantee the comfort of its guests: table d’ hôte, convivial room and private lounges seperated by moucharabiehs, and the Captain’s Table with its fireplace to enjoy in warm and cozy dinner.
Le Caravane restaurant
While we were waiting for the starter, we decided to order a glass of champagne as a small celebration of our arrival to Marrakech and Royal Palm. We were mesmerized by the view- the natural setting itself is worth visiting Le Caravane, but the explosion of tastes that was following exceeded our expectations. We were served delicious sardines. This dish was focused, creative, and delivered an element of surprise. Later on we got a recommendation to order a lobster and a salmon. We came to conclusion that the specialties of the restaurant are various fish meals all served in a special manner- very carefully arranged giving high attention to every detail. We were offered four types of warm bread, which were exquisite. The staff was very assertive, taking care that everything is served on time and taken away when is no longer needed. When it comes to wine our sommelier recommended Sauvignon “Le Blanc” from La Ferme Rouge cellars in Rabat which was fresh, elegant and floral, with subtle hints of citrus. Even the most experienced wine connoisseur will benefit from the sommelier’s expertise because he wants you to have the best dining experience possible.
For the main course we recommend salmon or steak, and for dessert- Caribbean chocolate Moelleux, Bourbon vanilla ice cream; Selection of home-made sorbets and ice creams or Chocolate “Parfait”, caramel sauce, salt and thyme, vanilla ice-cream. In the dining area, the restaurant boasts an amazing wine cellar with truly impressive selection of quality wines. For the special occasion you may order Château d’Yquem.
To us, cooking is about creativity, thinking, inventing, reinventing and taking risks. At Le Caravane we tried the most imaginative dishes inspired by fish and vegetables with all their flavors preserved. As first impressions go, this was one of the best dinning experiences we have ever had.
